About Alba
🌱 How Ceylon Cinnamon Alba Is Made: Nature’s Most Delicate Spice
Ceylon Cinnamon Alba isn’t just cinnamon — it’s the purest, rarest form of it on Earth.
Grown only in select regions of southern Sri Lanka, Alba is the highest grade of Cinnamomum verum (true cinnamon). What makes it so special isn’t just its flavor or health benefits — it’s the way it’s cultivated, harvested, and rolled by hand. A centuries-old tradition passed down through generations.
🧬 Why Alba Cinnamon Is So Rare
Only a tiny fraction of cinnamon trees can produce bark fine and soft enough to qualify as Alba grade. It’s called Alba because the final quills are as slender as a pencil — just 6mm in diameter.
Only the youngest, most tender inner bark from the thinnest branches is used.
twice a year at most, allowing the plants to regenerate sustainably.
Every quill is hand-peeled, hand-graded, and hand-rolled — no machines, no shortcuts.
That’s why Alba is often referred to as the “champagne of cinnamon.” The labor it takes to produce a single stick is extraordinary, and only highly trained cinnamon peelers (known locally as kurundu karayas) can achieve this level of precision.
🔁 The Art of Hand-Rolling Cinnamon
The process is a beautiful dance between nature and craftsmanship:
Farmers carefully cut the young branches early in the morning, when the cinnamon bark is most pliable.
The outer bark is gently scraped away by hand to reveal the golden inner bark — soft, fragrant, and incredibly thin.
Using a delicate touch, the bark is rolled into tight quills and dried naturally in the shade, preserving its essential oils and delicate aroma.
Only quills that meet the strictest diameter and uniformity standards are labeled as Alba grade. The rest are classified as C5, C4, or lower.

This is cinnamon that doesn’t just sit on your shelf — it transforms your tea, elevates your cooking, and nourishes your body.
🌿 Key Bioactive Compounds in Alba Cinnamon Sticks
The powerful health benefits of Ceylon Cinnamon Alba come from its unique natural chemistry. The most notable compound is cinnamaldehyde, which makes up 50–63% of its volatile oils. This is the key to cinnamon’s distinctive scent and flavor—and it also delivers strong antioxidant and anti-inflammatory effects, supports healthy blood sugar levels, and promotes heart health. Alba sticks contain significantly more cinnamaldehyde than lower grades due to the freshness and purity of the young inner bark used.
Another valuable component is eugenol, which offers antiseptic, antibacterial, and pain-relieving properties. Though found only in trace amounts, it contributes to Alba’s delicate, floral aroma and adds to the spice's therapeutic potential.
Cinnamic acid is another active compound known for its antioxidant and anti-fungal qualities, and it plays a key role in supporting a healthy gut microbiome and overall cellular wellness.
Perhaps most importantly, Alba cinnamon is extremely low in coumarin—a naturally occurring compound that can be toxic to the liver in large amounts. While Cassia cinnamon can contain up to 5% coumarin, Alba-grade Ceylon cinnamon has just ~0.0004%, making it one of the safest cinnamons in the world for daily use.
